1 Valencia Onion, thinly sliced
2 Strips Bacon (preferably less salt, more sweet flavor)
3 Ripe Figs (6 Dried figs out of season), sliced
4 Tbsp Butter
Puff Pastry or Filo Dough Sheets
Crumbled Goats Cheese
12 Piece Muffin Pan
*makes 12 small tarts
Preheat oven to 350°.
Cook onion in butter until caramelized – figs should be thrown into the pan when onions are about half way done. Cook Bacon separately and pat dry of oil. Cut bacon into small pieces and mix with onion and fig mixture.
Line each section of a 12 piece muffin pan with your preference of dough – minding the instructions for that choice. Fill each section with onion mixture, separating it evenly between each tart.
Cook about 15-20 min or until crust is golden. Top with 1 piece goats cheese and serve while hot.
